Amazon Fried Chicken with Cilantro Sauce

This chicken is called Amazon Fried Chicken because it comes from Chef Michael Cordua of the restaurant Amazon in Houston.  What makes it interesting?  It’s breaded with crushed potato chips.


I used kettle chips because they’re extra crisy and I thought they’d stand up to the cooking without getting soggy.  It worked — the outer layer of the chicken stayed very crispy.  I served this with a salad of lettuce, tomato and a little bit of dill dressed with Lime-Dijon Dressing.


The cilantro sauce came out really well.  I halved the recipe but added an extra teaspoon of vinegar.  Vinegar is a great complement to potato chips — I absolutely love salt and vinegar chips.  So, as an introduction to this meal, we had as an appetizer kettle chips with the cilantro sauce and the homemade bourbon barbecue sauce I’d frozen after making  Barbecued Shrimp and Cheese Grits.  I served the barbecue sauce om the side with the chicken, also.
