Lasagna with Sauteed Broccolini

Real Simple’s Lasagna Recipe totally came through for me.  It’s easy and really good.  A relief after last night’s two-hour shrimp and grits cooking extravaganza.  I made only half the lasagna recipe and there was a ton left over so I froze it. The only other change I made was to chop up some fresh basil to sprinkle on top after the lasagna came out of the oven.





I wanted to have a green vegetable on the side and keep it light and fresh as a contrast to the beefy lasagna.  I found the recipe for Broccolini with Lemon at the Food Network .  The directions on this recipe are totally lame and not descriptive at all, so I winged it:  1) Blanch broccolini (2-3 minutes in boiling water) and then dunk in ice water.  2) Sautee shallots and garlic in butter until soft.  3) Add broccolini to pan and warm through.  4) Squeeze lemon over broccolini, season with salt and pepper.
