Browned Butter Mashed Potatoes

I promise these looked better when I served them than in this photo while they were being mixed. In the heat of the party-prep moment, I didn’t have time to take a picture of the finished product, but as the recipe suggests, these are great garnished with browned butter drizzled on top and sprigs of fresh herbs around the edges of the serving container. Here’s the recipe from Southern Living:

Browned Butter Mashed Potatoes

I tripled the recipe for a crowd of 25 — the proportions held up and it worked out great. I used the standing mixer with a paddle attachment to mash them in three batches due to the quantity. The trick is to mix them the minimum possible amount or you’ll end up with a gluey-textured mess. I made these the day before, put them into two 9×12″ baking dishes, refrigerated overnight covered with foil, and then reheated in the oven at 350 for about 45 minutes as specified in the recipe.  I then put them in a large serving platter garnished with herbs and a little browned butter poured over the top.
