Green Mango Salad

Ok, so my mangoes weren’t green — I let them get a little riper than this Food and Wine recipe calls for.  Still, the mangoes, jalapeños, sweet onions (Vidalia) and lime juice come together to make a great flavor combination of sweet, spicy and tangy.  It could almost be dessert when you use ripe mangoes.  We lucked out in that our fresh jalapeño wasn’t very hot, otherwise I could see this salad being a scorcher.  This is a nice fresh side for a summer dinner.  I served it tonight with a recipe I put together of chicken tostadas with grilled corn, poblanos, and tomatoes.
