Chocolate Chocolate Chip Banana Mini Muffins
I had a hankering for a mixture of chocolate and bananas, kind of like those chocolate dipped frozen bananas I had when I was a kid, so I whipped up these mini muffins to replicate that combo. I looked at a lot of recipes for banana chocolate chip muffins, but none of them had a chocolate batter — just banana with chocolate chips. So, I concocted my own version.
Here’s the recipe I ended up with:
Chocolate Chocolate Chip Mini Muffins
2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup semi-sweet chocolate chips
3/4 cup brown sugar
1/2 cup milk
2 eggs, beaten
1/2 teaspoon vanilla
2 ripe bananas, mashed
3 heaping tablespoons baking cocoa
1/4 cup butter (1/2 stick), melted
Preheat oven to 400 degrees. Spray mini muffin tin with cooking spray. Mix together flour, baking powder, salt and chocolate chips in a large bowl. Melt butter and stir in cocoa until well mixed. In a medium bowl, mix bananas, eggs, brown sugar, vanilla, milk, and butter-cocoa mixture. Make a well in the dry ingredients and pour in wet ingredients. Stir until just blended. Spoon batter into mini-muffin cups by the teaspoon. Bake for 10 minutes or until muffins spring back when touched. Makes 36 mini-muffins.
When I made this batch, I used two heaping tablespoons of cocoa. I didn’t think that was quite chocolately enough, so in the recipe above, I’ve recommended three. Or using dark chocolate cocoa might be good. The chocolate chips did provide a lot of chocolate flavor, though, particularly because I used regular sized chips in mini muffins. Also, I used two whole mashed bananas because I really wanted that flavor to come out, and that worked well. We really enjoyed these and they freeze well, too!
