It’s a Meat and Potatoes Night
Add a salad and what more do you need? For tonight’s dinner we had nice little filets pan-seared in butter and finished under the broiler, Crash Hot Potatoes from Pioneer Woman (a recipe I discovered through the Cooking Stuff blog), and Spicy Red Pepper Caesar Salad with Homemade Garlic Croutons, posted separately.
The potatoes turned out flavorful and crispy just as Pioneer Woman promised. I boiled them and then smashed them with the bottom of a glass because I didn’t have a potato masher. Then on with the olive oil, freshly ground pepper, finely chopped fresh thyme, and the fleur de sel I picked up at World Market’s Minnesota going out of business sale.
I kept the steaks simple — I just seasoned them with salt and pepper, rubbed on a little roasted garlic left from the salad dressing I made and seared the steaks in butter. I garnished the steaks and potatoes with a little fresh thyme. Delicious.
