One-Pot Fettuccine Alfredo with Asparagus

This is the fastest dinner I’ve made in recent memory. Twenty minutes and done, courtesy of Food and Wine: Fettuccine Alfredo with Asparagus. Not so good on the health-o-meter, but it tastes great, and fast also counts for something in my book. I don’t think I’ve ever made Fettuccine Alfredo before because I was always deterred by the calorie content. Turns out it was very tasty, and taken in moderation, probably won’t kill you.

The quickness and easiness of this recipe cannot be overemphasized. Food and Wine also gives you several handy-dandy variations with the recipe including Fettucine Alfredo with: ham and peas, fresh mixed herbs, or parsley and sage.



Oooooh – I had sworn off Alfredo sauce b/c it’s so rich but this brings back so many tempting memories . . . !
