Heirloom Tomato and Goat Cheese Salad with Citrus Vinaigrette

Here’s today’s fancy salad of the day!  Yellow heirloom tomatoes, goat cheese and pine nuts on a bed of organic “herb mix” greens.  To dress this, I mixed up the citrus vinaigrette I use on just about everything:

2 tablespoons olive oil

1 teaspoon honey

1/2 teaspoon dijon mustard

1.5 tablespoons lime or lemon juice

salt and pepper

I dressed the greens and reserved a little dressing.  I arranged the tomatoes, cheese and nuts on top of the greens, and the drizzled the rest of the dressing on top.  Delicious!
