Arugula-Endive Salad with Honeyed Pine Nuts

Honey, pine nuts and Maytag blue cheese make such a beautiful combination. I’m on a “fancy salad” kick and this Food and Wine recipe really hit the spot for lunch: Arugula-Endive Salad with Honeyed Pine Nuts. The intense flavors and richness of this salad mean you don’t have to eat a lot to feel satisfied.

Making the honeyed pine nuts was really easy and it took about 5 minutes — I just followed the recipe exactly and they came out well, kind of like pine-nut brittle. The only change I made to the recipe was to add a little radicchio for color.
