Chicken Souvlaki

This is a great fast, healthy Greek recipe from Real Simple.  It can be served on top of pitas or inside them, or even by itself.  It’s hard to beat the chicken/tomato/feta/onion combination served with dill cucumber yogurt sauce (tzatziki).  I served it with white rice and a simple green salad dressed with olive oil, lemon juice, honey, dijon, salt and pepper.  With out further ado, here’s the recipe:  Chicken Souvlaki.


We drank Burgess Napa Valley Syrah 2004 with the meal.  Fantastic!  I was lucky enough to get a California wine-of-the-month membership for my birthday from my sister-in-law and brother-in-law.  This was the first wine we got and it is amazing!
