Roman-Style Chicken
Well, I lucked out today. It was -8 degrees outside and I didn’t really want to make a trip to the grocery store, but I had all the ingredients for Giada de Laurentiis’s Roman-Style Chicken with peppers, capers, prosciutto, tomatoes and garlic.
I halved the recipe, used only chicken breasts, and served it over egg noodles. My only other change was to use all red peppers instead of red and yellow. This was a great hearty meal for a cold night!
