Pear and Yellow Pepper Salad with Creamy Lemon Dressing

Today for lunch I made this salad using what I had on hand: a ripe pear, a yellow pepper and some lettuce. For some reason a creamy dressing sounded good with the pear. I chopped about one-third of the pepper and half of the pear, tossed them and the lettuce with the dressing, topped it with a little freshly grated Romano cheese, and had a couple wheat crackers on the side.

The dressing was something I mixed up and added to along the way, but I think the following ingredient list should be pretty close:
1 tablespoon lite mayo
1 tablespoon EVOO
2 tablespoons lemon juice
2 teaspoons apple cider vinegar
1 tablespoon finely minced shallot
1 tablespoon honey
1/2 teaspoon dijon mustard
sea salt and freshly ground pepper
Whisk until combined, tasting to be sure ratio of ingredients is to your liking. I added a little chopped fresh thyme to my dressing, but it overpowered the other flavors and the delicacy of the pear, so I wouldn’t recommend it.
