Italian Fried Egg BLT Breakfast Sandwich

While making my husband Ciabatta French Toast, Scrambled Eggs and Pancetta for breakfast this morning, I decided I wanted something a little less sweet. I wanted to use many of the same ingredients so it would be easy to make simultaneously. This is what I came out with. The sandwich on ciabatta, a light and porous Italian white bread, is made from layers of provolone (fresh mozzarella would also be good), tomato slices, fresh basil, crispy pancetta (Italian bacon) and a fried egg over easy. Here’s a photo of it all before it’s put together. Very tasty if I do say so myself.



I love any Italian and will definitely be trying this out as well!
